Sorry for the delay! Desculpem a demora!

Hello everyone and sorry for this delay but I was with terrible allergies and sinus pain for more than a week and that took all my energies, but I am back, and cooking!!!
In the next few days I will be posting some of my latest ideas that I have cooked!

Tapas Class at Williams-Sonoma Store 04/05/09!!

Tapas Class Everyone!!! Yes it is coming and it will be delicious and fun too. Will be on April 5th 2009 at the Williams-Sonoma Store at the Boca Town Center Mall in Boca Raton and it will be from 6PM to 9PM.

The recipes that I will be preparing for the Tapas class will be:

- Fresh Tuna & Olive Crostini - French bread toasted topped with pan seared fresh tuna and kalamata olive tapenade.

- Wild Mushrooms & Goat Cheese & Chili Oil - Wild Roasted Mushrooms (shitakes, creminis and oisters mushrooms) topped with goat cheese and served on french bread;

- Garbanzo & Chorizo - Chickpeas and smoked turkey sausage

- Albondigas - Turkey & Chicken Spanish Style Meatballs.

Aulas de Tapas (versão espanhola para pesticar)! Sim, está chegando o dia e será delicioso e muito divertido! Será no dia 5 de abril de 2009 na loja do Williams-
Sonoma que fica no Mall do Boca Town Center em Boca Raton e será das 6 da tarde às 9 da noite.

As receitas que estarei preparando para vocês será:

- Atum fresco com Tapanada de Azeitonas kalamatas servido na baguete francesa;

- Cogumelos selvagens grelhados com queijo de cabra e servido em baguete francesa;

- Grão-de-bico e Linguiça defumada de peru;

- Almondegas feitas com carne de peru e de frango à moda espanhola.

Será imperdível e tudo muito saudável pois adaptei as receitas para uma versão mais light e tudo muito saboroso!! Espero ver você lá!!

Saint Patty's Day!

Tomorrow will be Saint Patrick's Day and if you will be celebrating too here are a few ideas of what I thought it might be good to prepare for food. I never found too many appetizers for Saint Patty's Day but a nice idea will be to prepare a good table with some of the Irish most traditional dishes, like Colcannon (delicious dish made with cabbage and potatoes), Sheppard's Pie (made with real lamb) or a Guinness and Onion Soup with Irish Cheddar Crouton Recipe (look like a french onion soup but the flavors are very Irish!). But how can you serve all of this differently, do mini version of everything, or serve as a buffet style, ( I would prefer the mini version) and don't forget to serve together some good old Guinness beer!! If not, it won't be an original Saint Patrick's Day!!

Leftover Chicken Teriyaki!!!



If you could have tasted this dish, it was divine!! It was a busy, busy weekday and I didn't had the time to actually think about "what's for dinner tonight?" when I remembered that I had some frozen leftover angel hair pasta with just some extra virgin olive oil. So I quickly thawed that pasta and started creating a what I named "Leftover Chicken Teriyaki with pasta". Basically everything was leftover, less the chicken breast that I had separated to use for dinner but didn't know until then what to do with it? So this is what it turned out:

- 3 1/2 cups of frozen leftover angel hair pasta;
- 1/2 cup of chopped leeks (leftover);
- 1/4 cup of sliced Shitake mushrooms (leftover);
- 1/4 cup of lenghtwise sliced Spanish onion (fresh);
- 1/2 tbsp of minced garlic (fresh);
- 1/4 cup julienned carrots(fresh);
- 2 tbsp of fresh chopped green onions;
- 3 tbsp of Teriyaki sauce (recipe follows);
- 1/2 chicken breast fillet, sliced into thin strips;
- 3 tbsp vegetable oil;
- salt and pepper;

Preparation:
Sauté your chicken strips with 2 tbsp of vegetable oil, salt and pepper until chicken partially cooked and golden brown. Add leeks, onions, garlic, shitake, carrots and the Teriyaki sauce and cook for about 3 to 4 minutes. Stir well and add the thawed ( or fresh) angel hair pasta and add remaining vegetable oil and taste your salt if you need more. Plate this dish with the pasta and some of the chicken on top, drizzle just a little bit of soy sauce around it and sprinkle some chopped cilantro (leftover too!!) all over it. Voilá! Take a look at the pictures so you can see how it actually came out! Beautiful and delicious!

Teriyaki Sauce

- 2 cup soy sauce
- 1/4 cup water
- 2 tbsp rice vinegar (cider vinegar will do too!)
- 1 tbsp, plus 2 teaspoons light brown sugar
- 1/4 cup sugar
- 1 1/2 tsp minced garlic
- 1 1/2 teaspoons minced ginger

Directions

Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
You can save this prepared sauce inside a plastic container in the frige for about 1 month, as the vinegar and the sugar helps to preserve and maintain it's taste and consistency.

Pessoal, esse macarrão ficou delicioso! E tudo (praticamente tudo) de sobras! Foi um dia "bisadérrimo" do meio da semana e eu não tinha ideia do que fazer para o jantar mas já tinha decidido que seria com frango pois já estava descongelando um peito de frango mas ainda não sabia o que fazer com ele. Eis então que surge uma ideia e tudo ficou divino! Eu me lembrei que tinha uma pasta de cabelo de anjo congelado somente com um pouco de azeite de oliva e resolvi criar um "Frango Teriyaki de Sobras"! Ficou ótimo, dêem uma olhada na receita, e ficou fácil tambem!

Ingredientes:

- 3 1/2 copo de macarrão cabelo de anjo(congelado de sobras com azeite de oliva);
- 1/2 copo de alho porá fatiado (o meu foi de sobrasque eu tinha);
- 1/4 copo de cogumelos Shitake fatiados (tbem de sobras);
- 1/4 copo de cebola fatiada transversalmente(fresca);
- 1/2 colher de sopa de alho bem picadinho(fresco);
- 1/4 copo de cenouras cortadas ao julienne(em tirinhas finas frescas);
- 2 colheres de sopa de cebolinha picada (fresca);
- 3 colheres de sopa de molho Teriyaki(receita segue junto);
- 1/2 peito de frango desossado e fillet e cortado em tiras finas;
- 3 colheres de óleo vegetal;
- sal e pimenta do reino à gosto;

Modo de preparo:

Tempere o frango com sal e pimenta do reino e use uma frigideira média para fritar o frango com 2 colheres de sopa de óleo vegetal até que o frango esteja dourado. Adicione o alho poró, cebolas, alho, shitake, cenouras e o molho Teriyaki e cozinhe tudo por 3 a 4 minutos em fogo médio alto. Misture tudo muito bem e adicione o macarrão descongelado, ( se quiser use o qualquer outro macarrão de sua preferência e tambem pode usar o macarrão fresco, cozido na hora) e adicione o restante do óleo vegetal e acerte o tempero se for necessário. Arrume o prato com este macarrão com um pouco do frango em cima e regue somente um pouquinho de molho de soja ao lado e por cima do macarrão e salpique um pouco de coentro picado (tbem foi de sobra o meu!) por cima e Voilá! Dêem uma olhada nas fotos para verem como ficou realmente na finalização! Maravilhoso e delicioso!

Molho Teriyaki:

- 2 copos de molho de soja;
- 1/4 copo de água;
- 2 colheres de sopa de vinagre de arroz ( ou pode ser vinagre branco ou vinagre de maçã tambem!)
- 1 colher de sopa + 2 colheres de chá de açúcar mascarvo light;
- 1/4 copo de açúcar (branco;
- 1 1/2 colher de chá de alho bem picadinho;
- 1 1/2 colher de chá de gengibre fresco bem picadinho ou ralado;

Modo de preparo:

Misture todos os ingredientes numa panela funda média e aqueça bem até todo o açucar esteje dissolvido.
Você pode guardar este molho preparado em um recipiente de plástico na geladeira por mais de 1 mês pois o vinagre e o açúcar conservarão o sabor e a integridade do molho.

International Women's Day ! Dia Internacional das Mulheres!


Congratulations to all of us women! Why we celebrate this day today? Because on March 8th 1857, 129 women from a Cotton Industry in New York City, decided to go on strike March 8th 1857 was also marked to be the first strike to be conducted only be women) to ask for better conditions of work, less working hours, to a more humane working system, against getting beat up by other men co-workers and nothing being done after that and also against sexual arrestment. And unfortunately for those women, their lives were terminated drastically on that day as instead of getting a chance to be heard they were strongly intimidated and decided to refugee back inside the fabric industry. The owners, together with the police, locked those women inside and then, the place was set on fire and those women were burned to death!
On 1910, at the II International Women's Conference, was then decided that every year on March 8th those women were going to be remembered and to never be forgotten!
Wow!! al of this happened on 1857 but doesn't some of the news sound really familiar still nowadays?? Unfortunately yes!! And we are now at the year of 2009, it’s a new Era and things should be different by now, but so far little was changed. We did fight to change some very important laws to favor us, like the right to vote, to work, to receive same treatment at work as men do and etc but we still hear a lot of news of women getting beat up till death and little being done after that, and this still happens in a lot of different countries too where the law didn't change much about women's right! But even with all the obstacles that we are challenged every day, I am PROUD to be a woman that is a mom that works, nurture my family, and that is conquering my professional dreams day by day! So Celebrate today and every day as every day is our day! Happy International Women's Day!!

Parabéns para todas nós Mulheres! Porque celebramos essa data hoje? Porque no dia 8 de Março de 1857, em Nova Iorque, 129 operárias de uma fabrica de tecidos de algodão, decidiram paralisar seus trabalhos, reivindicando o direito à jornada de 10 horas. Era 8 de março de 1857, data da primeira greve norte-americana conduzida somente por mulheres. A polícia reprimiu violentamente a manifestação fazendo com que as operárias refugiassem-se dentro da fábrica. Os donos da empresa, junto com os policiais, trancaram-nas no local e atearam fogo, matando carbonizadas todas as tecelãs.

Em 1910, durante a II Conferência Internacional de Mulheres, realizada na Dinamarca, foi proposto que o dia 8 de março fosse declarado Dia Internacional da Mulher em homenagem às operárias de Nova Iorque para que essas mulheres nunca fosse esquecidas e que esse dia fosse para sempre lembrado.
Mas eu me pergunto, isso tudo ocorreu em 1857, e porque até hoje eu ainda escuto notícias muito parecidas como esta? Infelizmente sim, ainda escutamos tais barbaridades! E nós estamos no ano de 2009, uma nova Era e muito já deveria estar diferente mas pouco foi feito e mudado. Nós (mulheres) lutamos e vencemos em causas muito importantes, como o direito de votar, de receber tratamento de igualdade em relação aos homens no setor profissional (apesar de que ainda ouvimos histórias diferentes!) e outras causas mais, mas infelizmente todos os dias ouvimos ainda notícias horríveis de mulheres sendo espancadas pelos seus maridos ou estrupadas e pouco sendo feitos depois sobre isso!! E isso ocorre em praticamentes todos os países, inclusive EUA, mas no Brasil tem sido demais!!
Mas mesmo apesar de todos esses obstáculos que enfretamos todos os dias, eu sou ORGULHOSA de ser MULHER! De ser mulher e mãe, que trabalha, que dá afago,acolhe e ama sua família e que busca novas conquistas profissionais a cada dia!
Por isso celebre hoje e todos os dias, pois todo dia é o nosso dia!

Brazilian Store and links

There are good brazilian markets everywhere nowadays but I use 3 of them always, the first one is Seabra at Sample Road/Military Trail, 2nd - Brazilian Super Market at 39th St./US1-Federal Highway and 3rd Latinos in a small Mall righ at the SE Corner mall of Hillsboro Blvd/Military Trail. All of them will have all of the products that I used for the Brazilian Risotto (Jerk Beef and Butternut Squash Risotto) and also the internet links that I found was http://store.casabrasilstore.us/ and also http://www.sendexnet.com.

Risotto class at Williams Sonoma in Boca Raton FL





Hello everyone!
I had a wonderful and a great time with at the Risotto class. All the Risotto's came out perfect and delicious and I had a divine time with every single one! I hope you had a great time and have enjoyed my class too and don't forget that there will be another class in April 5th 2009 for Tapas and May 17th 2009 for Thai-French Fusion Cuisine. I hope to see you there, and check my blog as much as you can as I will always be posting new recipes, food information, and it will be always a pleasure to answer to your doubts!
